French Onion soup is such a comfort food for me. It is always soup of choice when I am dining out, and I adore all the melted cheese on the top of the bowl. Sure, it may not be ideal for a first date, due to the awkwardness of the cheese stretching all over the place, but other than that, it really is an anytime food that is sure to fill you up.

On top of all of that, it really is pretty easy to make yourself, and it can be done in your CrockPot. You just place the onions in to cook up and caramelize, then finished under your  broiler in a few minutes.

Crockpot French Onion Soup Recipe

Ingredients
  • 6 small sweet onions-sliced thinly
  • 4-14 oz. cans beef broth
  • 8 oz. bottle of beer
  • 5 Tbsp. butter
  • 3 Tbsp. balsamic vinegar
  • 3 Tbsp. brown sugar
  • 3 cloves garlic -crushed
  • ½ tsp. pepper
  • 2 tsp. thyme
  • 2 tsp. oregano
  • 1 tsp. marjoram
  • 1 tsp. parsley
  • sliced provolone cheese
  • french bread
Instructions
  1. Turn your crockpoot on high heat. Add in your onions, top with butter, balasamic, brown sugar, and garlic. Cook for 1-1 ½ hours, stir occasionally.
  2. Onions are ready when they are caramel colored and very soft.
  3. Pour in beer, and broth, add seasonings. Turn crockpot to low and let soup cook for 6-8 hours.
  4. Place oven safe bowls on a baking sheet, fill with soup. Slice french bread on the diagonal and place one in each bowl of soup. Top each with a slice of provolone cheese.
  5. Place under broiler for 2-3 minutes until cheese is bubbly and edges begin to brown.

  1. I love French onion soup and haven’t made it for quite some time. Caramelizing the onions just takes so long (though it’s def worth it!) I can’t wait to try this. I’ve got almost all the ingredients this week too. Score!

    • Made this today and when I added the water to the hot Crockpot, my Crockpot cracked. Agh! Finished the soup on the stove and it was fantastic. At least I was able to get the onion caramelization done before my Crockpot broke. On the bright side, the lid’s handle had broken off ages ago, making it nearly impossible to lift the Crock’s lid. I suppose it was time for a replacement ;)

    • Sometimes I cheat and caramelize a ton of onions in the crockpot at once for recipes throughout the month & freeze whatever I won’t use in the next couple days :)
